Microwave omlete

In a large CorningWare soup bowl

  • Two large eggs
  • Two big splashes of milk
  • Salt & pepper
  • Scramble, just until color is consistent
  • Microwave one minute
  • Re-scramble, cook another minute
  • Optional: Pour salsa in a line down the center of the cooked eggs
  • Fold and slide onto plate
  • Optional: Cover with shredded cheddar cheese

Milk makes the eggs fluffy. If too rubbery, use more milk. If too wet, use less.

Eggs might be the perfect food to cook in a microwave next to popcorn, bacon or a baked potato. It just takes a couple of minutes and doesn't require a frying pan or extra fat. Foolproof too. As far as I know, eggs are impossible to overcook in a microwave.

Just never try to cook an egg still in the shell. I did it once for entertainment purposes only. Because the owner's manual said not to do it. I put the egg inside a series of progressively larger plastic bags and finally inside a paper sack. What a waste trying to protect myself. The explosion shredded all of the bags. The oven contained the blast but it took an hour to cleanup. You have to do it at least once.
